So why "butt"? The story that has been passed down by generations of butchers is that during colonial days New England butchers tended to take less prized cuts of pork and pack them into barrels for storage and transport. The barrels that the meat was stored in were called butts. This shoulder cut of pork became known around the country as a New England specialty, and was called "Boston butt."
